For jai-alai....I don't think you can calculate the probability of win. At least not down to the very precise number like you can in the other games you mentioned. Same deal with expected payoff. I don't think you can calculate that precisely either. Not when a $20 bet would drastically change the pathetic pools. At best those numbers would be 'fuzzy' when it comes to jai-alai....fuzzy enough to make the result of the calculations nothing more than an estimate.
